Vietnam’s Traditional “Mi Quang” Recipe

Mi Quang is undoubtedly one of the top Vietnamese dishes, especially concerning Danang cuisine. This famous rustic dish is part soup and part salad. An ultimate comfort food, people eat Mi Quang at any time of the day - breakfast, lunch, dinner, and any meal in between. Here is how you can make this renowned dish at home (for 2 or 3 people).

 

 

Ingredients for the Broth:

900 grams of pork ribs (cut into pieces of 5 to 7 centimeters)

450 grams of shrimps

230 grams of pork belly

½ of a pineapple 

2 tomatoes (quartered)

1 onion (minced)

1 ½ tbsp. of minced garlic

3 tbsp. of fish sauce

2 tbsp. of annatto seeds

¼ cup of olive oil

1 ½ tbsp. of paprika

3 tbsp. of sugar

1 tbsp. of soy sauce

Salt and pepper (based on taste preference)

 

 

Ingredients for the Noodles:

900 grams of turmeric noodles or flat rice noodles

1 tbsp. of turmeric powder

1 tbsp. of olive oil

Flat rice noodles *Add turmeric powder for coloring and oil after noodles are done 

 

 

Recipe:

  1. In a large pot, boil 8-10 cups of water and add pork ribs. Boil for 10 minutes and discard water and add another 8-10 cups of water. Bring to boil and add onion and garlic. Boil for another 10 minutes and bring down to medium low heat. Just above a simmer.
  2. In a separate sauce pan, heat up olive oil and annatto seeds. Simmer for 4-5 minutes. Add oil to the large pot of ribs. Slice pork belly ½ centimeter thick and add to the pot, and then add chopped pineapple and quartered tomatoes, fish sauce, paprika, 2 ½ tbsp. sugar, salt and pepper. Bring to boil and then down to simmer for 20-30 minutes. 
  3. In a separate skillet, cook 1 tbsp. of olive oil, soy sauce and ½ tbsp. of sugar with shrimps. Cook on medium heat for 4-5 minutes. 
  4. Add: ½ cup roasted peanuts, leafy greens & herbs (lettuce, cilantro, mint), and lime.

 

 

Assemble:

In a separate sauce pan, heat up olive oil and annatto seeds. Simmer for 4-5 minutes. Add oil to the large pot of ribs. Slice pork belly ½ centimeter thick and add to pot, and then add chopped pineapple and quartered tomatoes, fish sauce, paprika, 2 ½ tbsp. sugar, salt and pepper. Bring to boil and then down to simmer for 20-30 minutes.
